Made the following last evening for dinner with some friends. Now I'm nowhere close to zobot's culinary wizardry - but the dishes worked out ok (I think - since I did not notice anyone gag ).
1. Porr's French Chicken Dish (for lack of a better name).
Ingredients:
Chicken Legs
Creme Fraiche (or regular whipping cream)
Shallots (chopped)
Fresh diced garlic
Parsley
Chives
Sliced Mushrooms
Salt and Pepper
Either grill the chicken legs or sauté in a pan with olive oil until cooked. Set aside.
In a pan, sauté the shallots and then add the garlic in. Add the mushrooms.
Now one word about mushrooms. Never wash mushrooms. Never buy pre-washed mushrooms. You can wipe them with a dry paper towel if you are a clean freak - but that's it.
Add the creme fraiche (I add one 7oz container full for around 6-7 pieces of chicken).
Add the parsley, chives, salt, pepper and the chicken in. Cook for around 5 mins and it's ready to serve.
This dish works well with garlic mashed potatoes.
In the plate, place the mashed potatoes in the middle and flank the chicken pieces around it. Add a little bit of sauce on top of the chicken and the potatoes and enjoy!!
2. Lamb Kebabs
All you need is ground lamb, onion, tomatoes, salt and pepper.
Add salt + pepper to the ground lamb. Dice onions and chop tomatoes. Add some salt to the tomatoes.
Create cylindrical shaped links with the lamb (they shrink after cooked - so they need to be of a decent size). Sprinkle diced onions and tomatoes onto the outside of the links.
Set oven to bake at 400F. Place pan in oven. At some point you will notice that the onions and tomatoes are done. At that point, switch oven to broil and then move the pan to the upper compartment of oven. Let it broil until the outside of the kebabs look crisp.
Remove from oven and enjoy! Some onions (and lime) on the side goes well with this.
