4 lg. chicken breasts (1 to 1 1/2 LBS.) 1/2 lb. swiss cheese 1 lg. (family size) can of cream of mushroom soup 6 servings of chicken stuffing, made in advance
Spray 9x13" glass baking dish with cooking spray.
Cut chicken into inch pieces. Cook in frying pan of your choice with Olive Oil. I also add fresh parsley and basil for flavor and color.
Line bottom of baking dish with chicken, layer with swiss cheese, then layer with mushroom soup, then layer with cooked stuffing spread.
Bake in a preheated 350°F oven for 30 minutes or until you see bubbling through stuffing.
DO NOT COVER while baking.

Quick Notes:
1. I use Campbell's Healthy Request condensed soup for this recipe as well to cut back on the salt content.
2. The original recipe asks you to boil the chicken (healthier though much blander way to cook the chicken), do so if you like, but I lightly salt, pepper, and add the fresh herbs while cooking in Extra Virign Olive Oil.
