Cracked the first bottle of the homebrew a little while ago ... it tastes like beer! But really, was just worried about lack of carbonation and 'off' flavors, but everything seems to be in order, for this bottle at least Congrats Beer Meister!!! Hope they all taste as good as the first!!!

Cider recipe may need some tweaking ... so far tastes like a really crappy bottle of champagne that's been open for a day.
But that won't stop me from drinking every last drop ...

tip: I bottle most of my beer in plastic bottles. I might do up a batch (6 gallons/~60 regular beer bottles/5 cases), and I will bottle most of it in (10) 2-liter (2 quart) plastic pop bottles, some of it in (4) plastic 1-liter bottles, (1) in a small (375ml) plastic bottle, and usually along with (2) old glass quart bottles (to put away). DO NOT DROP a 2-liter carbonated beer. I dropped one once and dove for cover expecting a big foamy explosion. Thank goodness it didn't blow. But man, was the bottle ever hard after that. Thought for sure it was going to split. Left it in the fridge for a couple of weeks, it reabsorbed some CO from the air space in it and lowered the pressure in it. I was not a fan of plastic bottles at the beginning. Wha? Plastic? really? But they do have a few advantages. You can squeeze the bottle to see if batch is ready. As they become carbonated, the bottle gets hard. It will 'ting' like a drum-skin when it's ready. You can't squeeze a glass bottle to check it, you must open it. And if it's not ready you just lost one beer. You use twist-on tops which can be reused. No buying-more or needing a bottle capper/opener. (You may however require pliers to remove twist-on cap as it locks quite hard in place as carbonation comes up). When you fill plastic bottles, before you put the cap on, you squeeze out the remaining air in bottle before capping. Helps with longer shelf life. And right after capping, the bottle is 'limp'. You will see the air space at top return and bottle get hard as carbonation comes up. why use: 2-liter plastic bottles - Each one is about a 6-pack. You can open it at the beginning of the week, and still be pouring from it at week's end, and it will still have a head on it. Homebrew/live beer keeps its carbonation much much longer than store-beer. Store-beer is flat within the hour, bah! 1-liter plastic bottles - akin to sitting and having a bottle of wine. Not too big, not too small. the (1) small plastic bottle - Usually the 'little bit left at the bottom of bucket' goes into this. Then I squeeze all the air out before putting cap on. The bottle usually looks 'crushed'. But I can see (at a distance) as it retakes its original shape as carbonation comes up. So I just look into the beer room, if I see the small bottle taking shape again, then I'll squeeze a big bottle to see if ready. I flick the bottle with my finger, if it has a drum-like 'ting' to it, it's ready to go. glass bottles - my 'primo' stock. If I have a batch I 'really like'. I'll put the glass bottles in stock and let them age. (light beers, not so long, the heavier stouts you can age longer) Also, most instructions say put the priming sugar in the bottles before bottling. A very time consuming tedious task. I rack the batch from the carboy into a bucket which I've put all the priming sugar I need for the batch, (and usually a little bit of yeast, just to 'speed things along'). Give it a good stir, a REALLY good stir. I usually fill a bottle or two and stir, then repeat. Much easier than trying to put sugar in every bottle. I think that's such a 'bad' way to do it. I don't know why they still say in the instructions to do it that way. Mixed in a bucket, the batch is all the same, added to every bottle and they can end up tasting different. I haven't made much lately, been busy. But from me-to me this xmas I ordered a still. I get access to lots of wine dregs/left over in filter at winery. I'm going to distill it and take out the ethanol. By this time next year I might be legally blind, hehe

Yeah I also put priming sugar into the bottling bucket rather than each bottle ... that would be a pain! I do use glass bottles though, picked up some cases from the local homebrew store for the last batch. I have a couple glass growlers as well but I usually just get those filled at the local brewery. I considered plastic for bottling but I already had the caps and the capper so ... Got an IPA style brewing now but it has two weeks til dry hopping and a week more til bottling, but in a month or so I'll have around 50 more beers!

From reviews it seems like it had a strong licorice flavor if I'm looking at the right beer? Reviews were kind of up and down , probably because I know a lot of people can't stand licorice

On the homebrew front, I'm bottling next Friday ... due to add some late hops to the batch this upcoming Friday. I also just ordered a Fat Tire clone kit from the website I've been getting the supplies from the past few times ... I figure I can get one more brew in this year before it starts to get too warm to do it with the equipment I have. I'll just get the new batch going right after I bottle what I have in the bucket now. You Colorado folks probably know of Fat Tire and New Belgium beers , but they weren't really around on the east coast for awhile. I'd always heard that Fat Tire was really good ... finally tried some a few years ago in N.C. at a restaurant and was impressed, and then a few months after that they started really making all their beers available here on the east coast. Now its no surprise to see them in the store but it was a big deal for me at one point

Cracked the first bottle of my IPA today for a taste and carbonation test ... carbonated, check. Taste? Delicious! Pretty strong citrus flavor (lots of grapefruit-y goodness) which is a-okay with me, big fan of the taste.
Starting my fat tire tomorrow , and in the mean time I have 48 more bottles of this to enjoy !

Starting a batch called Red RyePA today:
"The fruity citrus flavor of C-hops is a perfect addition to the spicy crispness of rye malt."
It looks like New Belgium actually has a beer out there called RyePA , maybe it will turn out similar to that if anybody has tried it (haven't had it personally)

How about this one? It's a Chinese beer. I had that for the first time at one of the more 'real' Chinese restaurants - this one in the heart of Downey, CA. Our waitress had no problem glaring at me while correcting my sad pronunciation. Shintao, not singtoe
